Our Cowboy Tater Tot Casserole is comfort food the Texas way! Made with hearty lean ground beef, pinto beans, black beans, roasted sweet corn, fire-roasted tomatoes, green chiles, sour cream, cheddar cheese, our own house blend of spices, and then topped with tasty tater tots and more cheddar cheese! Enjoy mealtime with your family on the range without ever leaving your dinner table!!! Serves 6-8.

You can add some extra heat with added jalapeno peppers, Habanero sauce, or Ghost Pepper sauce.

Remove lid and make sure no toppings are on inside of lid. Gently place lid back on casserole pan and bake in a preheated oven at 350°F oven for 25-35 minutes until cheese is gooey and bubbly. Remove from oven and enjoy!

Alternatively, you can cut the casserole into portions while it is still cold and place a portion on a microwave-safe dish – then heat for approximately 2 minutes until heated through. Microwave times may vary depending upon the microwave and size of portion.

Use caution when reheating casserole using either method – contents will be hot!
